Matcha for tea ceremony (koicha)
The name “koicha” is derived from the fact that the amount of hot water is small compared to the amount of matcha, resulting in a thicker tea.
Koicha uses about two to three times the amount of matcha as usucha.

Matcha for tea ceremony practice or for latte
Matcha has different “color, taste, and aroma” depending on the grade of tea leaves.
When making confections, the highest grade of matcha may not always be the best depending on what you are making.
The higher grade matcha has a better color, but it has less bitterness, which is unique to matcha, and the taste may be lacking when used in confectionery.
